does anyone have any best practice documentation for maintaining data security not only in terms of authorization in R/3 but infrastructurally as well.

they used to have a free download for SAP R/3 Authorisations Made Easy, think you have to pay now. some other good resources here. Course ADM950 is a good overview as well

SAP book Security and Data Protection for Sap Systems covers this pretty well. I got a used cpoy from amazon for about 10 euros
