The colon in th ename implies a CUSTOMR built role not an SAP role...
SAP doe not deliver one you must create it.

Does anyone know how to split out SPRO, so I can set it up for S&D Configurators, MM Config, SC Configurators, etc.....?

You first create projects in the in the SPRO that point to the modules, go to PFCG and use the "create Configuration roles" pull-down menu option that creates roles form projects, Assign the role to the users, have them configure incorrectly since they do not have the correct access so they find a way to configure it to make it "work", shut SAP down erase the system and reload, create a SPRO_ALL role and begin configuring it correctly...
