Do any of you know if there is a standard way to limit access to VA01 for certain sales order types for user roles?
For example, I want to give several user roles the transaction VA01 and VA02, but I only want some of those user roles to be able to enter or change order type OR. Then, some of the other user roles to be able to do other limited order types.

You can restrict this by controlling authorisation object V_VBAK_AAT (auth for sales doc type).
By entering the sales doc types you need in object field AUART, you should be able achieve your requirements.
