In material master, we want the default values in some fields (e.g UOM, Profit Center, Purchasing group, etc.)
Is there any configuration? or it can be done only thru User exit?

You can default some fields via the MRP profile, but much easier is to copy from a reference material master.

Yes we can do many things default by creating MRP and Forecast Profile
and through copying the material but we need to put parameters ID , It did work in few transactions like goods issue where I need to default the print check as default but I couldn't do it while using parameter ID for the division field in material master.
Is there any thing else we need to do?

Answer:
Parameter Ids work on places where you parameters have: in initial screens and in selection screens.
The division will come over if you do a copy from a reference material
