Also, how can I setup chains which must run weekly from company periods 1 to 3 and then daily from company periods 4 to 5 ? Can this be created using 1 process chain

the restriction to period 123 or 45 is to be done at infopackage level,
you need to fill the restriction fields with an abap,
this abap will input 123 or 45 depending on the day of the run,
then you run the chain daily

CHC is right .
it can be done by filling value in selection period in your infopackage , in addition of this if your dont want to use abap then you may create 2 process chain . 1 is for weekly run in 1 to 3 fiscal period & 2nd one you can run from 4 to 5 period .
you can minimize your effort to create process chain if you copy the existing one . ( using COPY in command field ) . but you need to change the start variant .
