Question:
If I am loading data from an ODS to multiple InfoCubes and I am doing a full load each time (i.e. delete all cube data and rebuild) what are the advantages/disadvantages of the different data processing options? Currently we are doing "PSA and then Data Targets." Is that better than "Data Targets Only"? When would you use one versus the other?

If you retain ODS data, then no need to go to PSA really...I mean the data is IN BW at that point.
Using PSA for loading in BW itself is something we don't do simply because it adds more to the tablespace and size, in our case, is a constant thing we need to keep an eye on.
Also, it will take longer if you go to PSA then target.
We only use PSA when extracting from R/3 - for obvious reasons (deltas, no impact to R/3 if we must rebuild from PSA etc)
