Answer:
If you want to edit data before it gets into the cube, load it into PSA, edit the record(s) and then update it into the cube.
If, for some reason, the update into the cube fails, you can delete the failed request from the cube & relaod it manually from the PSA. (If you don't have a PSA, then in this scenario, repeat the delta, but that is digressing from the topic.)
Look at this way: if a cube is a summary of your data, then an underlying ODS should provide you with more granularity (details). A quick example, you wouldn't want to bring in sales document numbers and item numbers into a cube, that would cause all kinds of performance problems. Insteda, you could load these in the ODS, and to look at these details, drill through to the ODS.
For your third question, in the absence any details in the question, I would say, create a generic data source.
