How to change the status of number range interval for business partners in crm. I am trying to delete the number range it says it is possible only if the status is initial.

Same place where u define the number ranges:
Transaction SNRO..choose BU_PARTNER and click NUmber Ranges on the Bar and then change status.

But the status is the current count of created doucments , what will
happen to the business partner documents that were created already.

You guessed right. They will not be accesible. If you still want to usae them, Delimit the number range and create a fresh number range.
